Big Time Restaurant Group Announces New GM, Executive Chef at City Cellar and Barrio

Big Time Restaurant Group has appointed a new Executive Chef and a new General Manager for City Cellar Wine Bar & Grill and Barrio, both located at The Square in West Palm Beach.

Chef Farrin Kolpan has been appointed Executive Chef. He joins City Cellar from Okeechobee Steakhouse and Ruth’s Chris where he mastered his expertise in barbecuing and butchering. Chef Kolpan was born and raised in Parsippany, New Jersey.

Vincent Lewis has been named General Manager (featured in photo.)  With nearly a decade of gastronomy experience, Lewis most recently served as opening manager for Voodoo Bayou in Palm Beach Gardens. Prior to that, he was assistant general manager to help open The Woods Jupiter, owned by famed golf pro Tiger Woods.

Chef Kolpan has introduced new menu items to City Cellar, including Lobstercargot ($24.50) with herbed garlic butter and crostini; Chicken Schnitzel ($29) with spaetzle, asparagus, and lemon thyme jus; 16oz. Niman Ranch Pork Chop ($37) with mushroom risotto, haricots verts, and rosemary whiskey butter; Almond Crusted Bronzino ($37.50) with potato purée, asparagus, shallots, capers, and white wine; and Salted Caramel and Chocolate Tart ($9) with whipped cream, chocolate shavings, cocoa nibs, and flaky maldon.
