This winter, unleash your inner wellness warrior at the iconic Hilton West Palm Beach.   In December, the West Palm Beach hotel’s back lawn will turn into a verdant oasis showcasing group fitness and wellness classes and inviting guests to recharge and reconnect in the great outdoors.   F45 Training Saturday, December 21 8–8:45am Free for the public and hotel guests The “F” in F45 stands for “functional fitness,” meaning movements that support you in your daily life. And the “45” is for 45 minutes. Each monthly class will merge three leading-edge fitness training styles into one heart-pumping cardio workout, including high-intensity interval training (HIIT), circuit training, and functional training. All skill levels welcome and ages 18+.   Changing Frequencies: A Sound Healing Class Thursday, December 5 8-9pm $10 per person Free for hotel guests Local guru Martha Popova will guide participants through the ancient art of sound healing which helps with relaxation and mindfulness. On November 9, unleash your inner Ariel during mermaid training at Hilton West Palm Beach.

Hit the pool and learn how to become an aquatic princess with Vero Beach Mermaid! Led by world-famous PADI mermaiden, Brandee Anthony, the immersive, 60-minute class will teach kids and adults how to safely swim, kick, dive, and tread water gracefully while wearing a colorful mermaid tail and monofin. The fun-filled day will end with a mermaid photoshoot. We think Poseidon would approve.

Two sessions are offered at 9am and 10:15am.

Session 1: "Discover Mermaid" is open to kids ages 6 to 9.

Session 2: "Basic Mermaid" is open to adults and kids ages 10 and up.

Cost is $75 for Session 1; $155 for Session 2.

On Wednesday, October 23, at 7pm, enjoy an oenophilic tour of celebrated vintages beneath a blanket of stars at Galley located at Hilton West Palm Beach.
Inspired by the world’s most illustrious terroirs, guests will savor a five-course feast presented by Galley’s executive chef Rodrigo Mezadri. Each course will be complemented by live music and fine wine from Huneeus Wines. As the popular saying goes, “There’s no place like home,” and that’s exactly how Chef de Cuisine Joel Rodriguez described his return to Galley, the award-winning signature grill house and bar located inside Hilton West Palm Beach.

Chef Rodriguez, originally from Puerto Rico, debuted his culinary skills in the U.S. in 2017 at Galley, as the restaurant was undergoing a significant redesign. He was instrumental in creating some of the most popular dishes on Galley’s menu, receiving rave reviews and a #1 rating for the restaurant on TripAdvisor.

A hospitality industry veteran, Chef Rodriguez left Galley to pursue leadership positions with PGA National Resort and the Curio Collection by Hilton, before returning to Galley in September 2024. “This is where it all started for me,” said Chef Rodriguez. “Hotel leadership, my colleagues in the restaurant, and our guests are truly second to none. I honestly couldn’t wait to come back to Galley…it’s my happy place.”

Galley is in the process of introducing a number of ‘Chef Rodriguez-inspired’ entrées, sides, and desserts. Additionally, Chef Rodriguez will work with Executive Chef, Rodrigo Mezadri to oversee the restaurant’s popular Wine Dinner Series (September through May), which features a 5-course pairing event with cooking demonstrations, outdoor dining and live music.
